Title: It's-Not-Dessert Scalloped Sweet Potatoes

9 Inch prepared reduced fat
  Graham cracker crust*
2cSweet potatoes or yams peel; sliced thin crosswise slice int
1 Navel orange; peel; slice into thin circle; cut into small p
1tb-brown sugar; packed
1/3cOrange juice
1/4tsPumpkin pie spice
 pnCinnamon
 pnNutmeg; freshly grated
1tbMaple syrup
1tbLight butter

Preparation time 15 minutes Baking time: 1 hour 15 minutes *I'm going to make my own crust.

Preheat oven to 425 degrees. Layer potatoes in a single layer, overlapping them. Top with orange pieces. Repeat and end with potatoes.

Mix sugar and orange juice and pour over potatoes. Sprinkle with the cinnamon and nutmeg. Cover and bake an hour. Remove cover and drizzle with syrup and dot with butter. Bake until top is golden and potatoes are tender--about 15 minutes.
